Double Chocolate Ice-Cream Sandwiches
Ingredients Putting it together

1 c	shortening
1 c	sugar
1/2 c	firmly packed b. sugar
2	eggs
1 tsp	vanilla
1 3/4c	flour
1/2c	cocoa
1 tsp	baking soda
1/4 tsp	salt
1 c	chocolate chips (option)
vanilla ice-cream softened



In a large bowl cream together shortening, sugar and brown sugar. Add eggs, vanilla and beat until fluffy. Sift together flour, cocoa, baking soda and salt. Fold in chips (chill 15min) Drop by tbs onto ungreased cookie sheet, flatten with a fork into 3" circle then bake. Remove from cookie sheet, cool and place 1 scoop of ice cream on flat side of one cookie. Top with another. Wrap and freeze.

Bake 375o for 8-10 min
