At this time of year you could be overwhelmed with Tomatoes. If your vegetable garden is looking overwhelmed, have I got the recipe for you to try. Today I plan to share a recipe for a Tarte aux Moutarde or a French Tomato Pie and Mustard as I call it.
We were honoured to have Sandra and Florian from France at our Bed and Breakfast. As they were guests in our home we had the pleasure of escorting them around the Island when they explained they were unable to rent a car. Eight days, they ventured the Island, visited Charlottetown, came to Grandma’s for Afternoon Tea and we even found a bit of time to take them to Cavendish, then to the beach. For a special treat they asked if they could cook us supper on the night before they left. “You bet,” was my response. Getting a break from the kitchen stove.

Two ingredients we looked long for were cheese and mustard. We settled for Emmental Cheese, good choice and Raye’s Sweet & Spicy Mustard, another good choice.
When in Eastport, Maine this year I visited Raye’s Mustard shop and made several purchases.
I keep my Raye’s Mustard on the top shelf of the fridge, handy my reach
- 1 9-inch single crust pie
- 1/2 cup dijon mustard, or other
- 1 large ripe tomatoes, thinly sliced
- Grated Emmental cheese, about 1/2 of a cup
- 1 tablespoon olive oil
- Combination of: Marjoram, Savory, Basil, Thyme & RoseMary, Sage, and Fennel seed.
- 1 clove of garlic crushed
Preheat oven to 350 degrees F. Arrange the pie crust onto a pizza pie dish. Using a fork, poke holes into the bottom of the crust. Spread the mustard over the bottom of the pie crust. Cover the mustard with the Emmental Cheese. Arrange the tomato slices in a spiral from the edge to the center, covering the cheese. Drizzle olive oil over the tomatoes, and sprinkle the tomatoes with the herbs. Place another layer of cheese on top and bake in a preheated oven until the crust has browned, the cheese has melted about 20 minutes.
Made with Emmental Cheese is a wonderful pie.
Shown here is a tomato pie made with Old Cheddar as that is all I had tonight.
